Tropical Black Forest Yogurt Parfait

Inspired by the classic Black Forest cake, this tropical version brings coconut and macadamias to the iconic combination of chocolate and cherries. This vegan parfait unites creamy Koko Kai Dark Chocolate Coconut Yogurt with fluffy coconut whip, sweet cherries, a crunchy toasted coconut macadamia crumble, and rich dark chocolate. It’s easy enough to make as a treat whenever a chocolate craving strikes, yet special enough to serve as a dinner party dessert.

Ingredients:

For the Toasted Coconut Macadamia Crumble:

  • 2 tbsp roasted macadamia nuts
  •  1 tbsp toasted coconut
  •  ½ tsp maple syrup
  • Generous few pinches of flaky sea salt

For the Parfait:

  •  ½ c fresh cherries
  •  ¼ c coconut whip
  •  Toasted coconut macadamia crumble, above
  •  4 oz container Koko Kai Dark Chocolate Coconut Yogurt
  •  Small square of dark chocolate

Directions:

  1. To make the toasted coconut macadamia crumble, chop the macadamias coarsely. Stir together the chopped macadamias and toasted coconut with the maple syrup until evenly coated. Then, sprinkle the crumble with flaky sea salt.
  2. Set aside one whole cherry and a spoonful of coconut whip for topping the parfait.
  3. Pit the remaining cherries and cut them into quarters. 
  4. Add about half the cherries to the bottom of a serving glass or small jar. Layer in about half the coconut whip, about half the toasted coconut macadamia crumble, and about half the yogurt. 
  5. Repeat the same sequence of layers again, smoothing the yogurt on top into an even layer.
  6. Finish the parfait with the reserved spoonful of coconut whip, then use a grater to shave the dark chocolate across the top. Finally, add the reserved whole cherry.

 

Dietary Notes:

This recipe is vegan, gluten-free, and grain-free. In order to reduce sugar, omit the maple syrup from the crumble layer (although note that the salt won’t stick as well) and/or make your own whipped coconut cream at home. For nut allergies, omit the macadamias and use sunflower seeds instead.
